AVOCADO TOAST WITH FRESH PICO DE GALLO SALSA

Delight your family and friends with this Aussie classic brekkie with a Mexican twist. It's super tasty, easy and quick to make.
Ingredients
  • 2 slices of bread, preferably sourdough (bit toasted makes a great difference)
  • 1 ripe smashed avocado drizzle with a bit of olive oil and a pinch of salt
  • Butter
  • 1 cup pico de gallo salsa. Pico de gallo ingredients:
  • 1 roma tomato, diced
  • 1 tablespoon white onion, diced
  • 1 tablespoon fresh coriander, chopped
  • 1 small jalapeno or any green chili, chopped
  • 1 teaspoon fresh squeezed lime juice
  • Sea salt to taste
Instructions
  1. To make the pico de gallo, just combine all the ingredients in a serving bowl. Adjust seasoning if required.
  2. Toast bread and spread some butter in the process.
  3. Add smashed avocado and topped with fresh Mexican pico de gallo salsa.
  4. Season with more salt and pepper if needed.
