Homemade Mexican salsas always add “un poquito mas” (something more) – more colour, more taste, more heat even more happiness to all your cooking not just Mexican food.
Although most Mexican salsas are very easy to prepare the truth is that there are always some little secrets to make them look and taste exceptional. After some research and a lot of practice, these are my 5 essential tips for amazing homemade Mexican salsas:
1. Wash the vegetables. Do not skip washing your vegetables to reduce time in the kitchen. Dirt and other residues in our veggies are not only a health risk but it can also interfere with the taste and quality of our salsas.
2. Tomatoes and chilies. When a salsa recipe requires to boil chilies and tomatoes, do not overcook them as it could make your salsa taste bitter and colourless. As soon as your ingredients are slightly soft take them out of the heat and let them cool down for about 10 minutes before blending. Your salsa will taste great and have a vibrant appearance.
3. Garlic and onion. If you like smoky flavours in your salsas, roast the garlic and onion in a pan over low heat until softened and charred on all sides, 8-10 minutes. This technique intensifies all the flavours making your salsa irresistible.
4. Use warm water. Always use warm water to blend and perfectly incorporate the ingredients of your salsa. Use the same water where the ingredients were cooked, it will significantly improve the taste of your salsas.
5. Less is better. When it comes to how much water you add to your salsa, lees is always better. Adding excessive water will make your salsa looks runny and lacks of texture and flavour. Add water 2 tablespoons at the time until the desired consistency is reached.
