Wondering what food to bring? Here there is my perfect recipe for your next picnic time: Finger sandwich with Jalapeño & Coriander spread and mozzarella cheese. It sounds amazing, isn’t it? and so it is!
You will love everything about this sandwich recipe especially the Jalapeño & Coriander spread that gives those Mexican notes to the dish.
My lovely auntie Susi shared this recipe with me while I was living in Mexico (she makes it for event catering) but it wasn’t until I moved to Australia when I started to make it and now I’m so addicted to it.

Un-cooked fabulous snack
As you may have noticed, I’m a big fan of un-cooked, assembling meals and this is one of these amazing recipes.
It’s seriously very easy to make. Only requires 10 minutes, 5 ingredients, a food processor or a blender, and 1 bowl. Yes, you got this my friend!
The base for these yummy finger sandwiches is the Mexican jalapeño & coriander spread, which is made with mayonnaise, pickled jalapeños, coriander and a little bit of apple cider vinegar. It’s lush, so zesty and fresh!
When you combine this jalapeño dip with a good quality white bread and mozzarella cheese, the result is anything but an unique and very enjoyable appetizer. For a healthier version of this recipe you can elect to use a multigrain bread.
Do you know what else is great about this Mexican snack? You can prepare it several hours in advance, storage the assembled sandwiches in an airtight glass or plastic container and keep them in the fridge until ready to serve 😉
Versatile recipe
This easy to make sandwich recipe is very versatile and I love that. Although it’s great for picnics, you can also serve it as a party appetizer or as a dinner entree.
It’s ideal for snacking while watching your favourite TV program, footie or a movie. Furthermore, it’s a great option for a quick and light lunch.
Mention apart deserves the Mexican jalapeño and coriander dip. It’s my best-loved Mexican dip as it has endless applications.
Some of my favourites are: as a condiment for seafood tacos, for dipping with corn chips or celery sticks, or as a topping for a Mexican street grilled corn. The possibilities are as limitless as your imagination!
Hints & tips: For extra freshness and crunchiness add a couple of cucumber slices to your sandwiches. So fresh and delicious!

- 1 pack white bread
- 12 mozzarella cheese slices
- 1 cup classic mayonnaise
- 100 gr pickled jalapenos, without juice
- ¾ cup fresh coriander, roughly chopped
- 1 teaspoon apple vinegar
- Place mayonnaise, pickled jalapenos, coriander and apple vinegar into a blender or food processor. Puree until homogenized and smooth mix. Transfer to a bowl.
- Spread bread slices with Jalapeno & Coriander mix and sandwich with 1 slice of mozzarella cheese.
- Trim bread crusts and carefully cut each sandwich into four little squares, triangles or any shape you like.
- Transfer finger sandwiches to a large flat plate when ready to serve. Enjoy!
