The secret of an irresistible guacamole
This traditional guacamole recipe is incredibly quick and easy! It’s a 5-step recipe that will take you no more than 10 minutes preparation, and you will be the Queen/King of the day!
The secret of this recipe, which I learned from the amazing book author Diana Kennedy, is very simple. What you need to do is to blend or crush together, – with the help of a food processor, blender or a mortar – part of the base ingredients: onion, coriander, chili and salt, to create a paste and then combine with the mashed avocado.
This minor but significant variation will enhance the flavors and take your guacamole to the next level. After this, you will never look at Guacamole the same way again. But be warned because it’s very, very addictive!
Serving ideas
Guacamole works great as a healthy snack idea or as an entree. You can serve it with corn chips (totopos) on the side or with fresh corn tortillas to make tacos; I buy mines from La Tortilleria. Guacamole is also divine as a side-dish in any Mexican-Aussie barbecue.

Hints & tips: Serve and consume guacamole at room temperature immediately after it’s been made. To avoid oxidation, leave an avocado pit (or seed) inside the mixture.

- 3 large avocados, soft but firm (ripe)
- 3 tablespoon white onion, finely chopped
- 1-2 Jalapeno chilies, finely chopped
- 5 tablespoon fresh coriander, finely chopped
- ½ cup fresh tomato, finely diced
- 1-2 teaspoon lime juice
- Sea salt, to taste
- Blend or mash 2 tbsp of white onion, 3 tbsp of coriander, jalapeno chili and salt into a paste. Set aside.
- Slice avocados in half, remove pit and scoop the pulp out. Transfer to a mixing bowl.
- Roughly mash the pulp with the back of a fork or with a masher until creamy. Incorporate chili/onion paste, lime juice and mix well.
- Add remaining fresh onion, coriander and tomatoes. Mix and season to taste if required.
- Transfer to a smaller bowl and serve immediately.
